Classic shell madeleines with the signature hump, driven by thermal shock: cold rested batter into a hot oven. Batter holds 48 hours at 2-4°C and bakes to order — madeleines are a 10-minute product from fridge to counter, at their absolute best inside the first hour. Yield: 48 pieces (~20g).

Method

  1. Ribbon Whisk eggs, sugar, and honey on high for 5 minutes to a thick ribbon. The honey keeps the crumb moist over the display life and aids colour.
  2. Fold Sift flour, baking powder, and salt and fold in with the lemon zest in two additions — just to homogeneous, no further.
  3. Butter in Combine the melted butter (40-45°C) with the milk and fold in until the batter is glossy and falls in a slow ribbon.
  4. Cold rest Cover and rest at 2-4°C for a minimum of 2 hours, ideally overnight. The cold rest is not optional: the temperature differential against the hot oven is what raises the hump.
  5. Bake for the hump Pipe into buttered-and-floured (or sprayed) shell moulds to 90%. Bake from cold at 210°C fan for 4 minutes until the edges set and the centre domes, then drop to 175°C for 5-6 minutes to finish. Do not open the door during the first phase.
  6. Service window Demould immediately with one sharp rap of the tray. Sell within the hour if possible; hold airtight to end of day maximum. Bake in waves through service rather than in one batch.
