Petits fours

The workhorse petit four: brown butter, almond, honey — one-bowl batter, bakes from the fridge on demand. Batter improves after 24 hours rested and holds 4 days at 2-4°C, which makes financiers ideal for baking to order through service. Yield: 48 pieces in standard financier moulds (~25g).

  1. Beurre noisette Cook the butter over medium heat past foaming until the solids are hazelnut brown and the aroma is nutty — 165-175°C. Strain and cool to 45-50°C. The colour of the solids is the flavour of the financier.
  2. Dry mix Whisk icing sugar, almond flour, plain flour, and salt together. No creaming, no aeration — financier texture comes from the whites and the butter, not from whipped air.
  3. Batter Stir in the unwhipped egg whites and honey to a smooth paste, then stream in the warm beurre noisette, stirring until fully emulsified and glossy.
  4. Rest Rest the batter at 2-4°C for a minimum of 2 hours, ideally 24. Resting hydrates the almond flour, thickens the batter for clean piping, and deepens flavour.
  5. Bake Pipe into buttered moulds to 80% full and bake at 180°C fan for 12-14 minutes until the edges are deep gold and the centres spring back. From cold batter, add 1-2 minutes.
  6. Hold Demould onto racks while warm. Best within 8 hours; hold airtight 2 days. The batter, not the baked piece, is the storage format.
